I'm ashamed to admit that this NC native modified this recipe from Aaron Franklin, the Texas King of BBQ.
Unlike the Chopped Pork, I have no shame to have taken this method from Aaron Franklin.
This method is often referred to as 3-2-1 based on the typical timing of the phases.
Another recipe I have liberally borrowed from Aaron Franklin.
These are pretty easy to prepare but its still a bit time-consuming; its good there is some flexiblity in the time but you need to lead yourself a good window to work.
I'm not a big meatloaf fan to start with but this recipe came from a friend at work and changed my mind.
You can buy whole chickens and split them if your grocery doesn't sell halves.
