The Method
Step 1
Preheat a smoker to 250° F.

Cut pork belly into cubes, about 1 to

5 inch on a side, and place into a large bowl.
Step 4
Coat the pork belly with the olive oil and then apply the rub. This is most easily accomplished using your hands to mix and distribute.
Step 5
Spread the cubes onto the wire rack(s) on a single layer, they can be close together but try to add some space for the smoke and heat to get to each cube.
Step 6
Smoke for 3 hours.
Step 7
Remove the cubes ffrom the heat and place in foil pan. Add the butter, sauce, and honey to the pan and mix to coat the cubes.
Step 8
Cover the pan with aluminum foil and return to the heat for an additional 90 minutes.
Step 9
Remove the foil sheet from the pan and cook for an additional 15 minutes.
