Story
The surface area to volume ratio is high on these, meaning they can absorb a relatively high amount of smoke. Be careful to keep a clean fire and try not to use a wood with too strong a flvor. For the sauce and rub I tend to use sweet options, though I might go more savory/spicy if I'm making another dish that is using a sweet sauce.
Ingredients
- 5 lbs Pork Belly
- 3 tbsp Olive Oil
- 1 Cup BBQ Rub
- 1 Cup BBQ
- 3 tbsp Unsalted Butter
- 2 tbsp Honey
Tools
- 1-2 Wire Racks
- 1 Large Aluminum Foil Pan
- 1 Large Piece of Aluminum Foil, big enough to cover the Foil Pan
- Toothpicks (for Serving)
Instructions
- Preheat a smoker to 250° F.
- Cut pork belly into cubes, about 1 to
- 5 inch on a side, and place into a large bowl.
- Coat the pork belly with the olive oil and then apply the rub. This is most easily accomplished using your hands to mix and distribute.
- Spread the cubes onto the wire rack(s) on a single layer, they can be close together but try to add some space for the smoke and heat to get to each cube.
- Smoke for 3 hours.
- Remove the cubes ffrom the heat and place in foil pan. Add the butter, sauce, and honey to the pan and mix to coat the cubes.
- Cover the pan with aluminum foil and return to the heat for an additional 90 minutes.
- Remove the foil sheet from the pan and cook for an additional 15 minutes.
