The Method

Step 1
Preheat smoker/grill to 225° F and set for indirect cooking.

If using the wire rack, prep by lightly spraying with cooking oil.

Step 3
Cut the Jalapeno Peppers in half, lengthwise, and remove seeds and membrane. Cut the bacon slices in half, and split the Little Smokies lengthwise.

Step 4
Mix the Cream Cheese, Monterey Jack, and Chili Powder. Fill the hollowed out Jalapeno halves with the cheese mixture.

Step 5
Place the Sausage half on top of the filled Jalapeno and then wrap with bacon.

Step 6
Cook for 2 to 3 hours, until the bacon is browned. if using the wire rack, place the peppers on the rack prior to placing on the grill.
