The Method

Step 1
Combine the sugar and evaporated milk in a pot and stir until fully dissolved.

Step 2
Heat slowly and bring to a slow boil, stirring constantly.

Continue to stir once boiling for 8 minutes and then turn off the heat.

Add the butter and chocolate, stir until melted and fully incorporated.

Add the vanilla and stir.

Step 6
Pour into a lightly greased 9 x13” pan and allow to set. The fudge will end up firmer (and in my opinion better) if refrigerated.
