Smoked Meatloaf

Story
I'm not a big meatloaf fan to start with but this recipe came from a friend at work and changed my mind.
Ingredients
- 1 lb each, Ground Beef and Ground Pork
- 8 Strips Bacon, Cooked and Chopped
- 2 Eggs, whisked
- ½ cup Italian Panko bread crumbs
- 1/4 cup Whole Milk
- 1 tsp Seasoned Salt
- 1 tsp Garlic Powder
- ½ cup Yellow Onion, Diced
- ½ tsp Ground Black Pepper
- 2 cup Cheddar Cheese, Shredded
- ½ cup sweet BBQ
Tools
- Wire Rack
Instructions
- Prep grill to cook at 325° F and set for indirect cooking.
- Combine all ingredients (other than BBQ Sauce) in a large mixing bowl and shape into a loaf.
- Place on a well greased cooling rack.
- Cook to 165° F internal temperature. When Meatloaf is approximately 150° F evenly coat the Meatloaf with the BBQ Sauce.
- Slice and Serve immediately. The bits that get caught between and below the cooling rack are exceptionally delicious (we call them Meatloaf Burnt Ends).
