Smoked Meatloaf

Story

I'm not a big meatloaf fan to start with but this recipe came from a friend at work and changed my mind.

Ingredients

  • 1 lb each, Ground Beef and Ground Pork
  • 8 Strips Bacon, Cooked and Chopped
  • 2 Eggs, whisked
  • ½ cup Italian Panko bread crumbs
  • 1/4 cup Whole Milk
  • 1 tsp Seasoned Salt
  • 1 tsp Garlic Powder
  • ½ cup Yellow Onion, Diced
  • ½ tsp Ground Black Pepper
  • 2 cup Cheddar Cheese, Shredded
  • ½ cup sweet BBQ

Tools

  • Wire Rack

Instructions

  1. Prep grill to cook at 325° F and set for indirect cooking.
  2. Combine all ingredients (other than BBQ Sauce) in a large mixing bowl and shape into a loaf.
  3. Place on a well greased cooling rack.
  4. Cook to 165° F internal temperature. When Meatloaf is approximately 150° F evenly coat the Meatloaf with the BBQ Sauce.
  5. Slice and Serve immediately. The bits that get caught between and below the cooling rack are exceptionally delicious (we call them Meatloaf Burnt Ends).
