Smoked Chili con Queso

Story
You can mix up the rub, the sausage, and the version of RO-TEL used to change the flavor and spice level. 16
Ingredients
- 1 lb, pork sausage
- 1 (2 lb) block of V elveeta cheese, cut into 5-6 large pieces
- 1 lb smoked Gouda cheese, cut into 1-inch cubes
- 1 Can (10 oz) RO-TEL Original Diced Tomatoes and Green Chilies
- 1 Can (10 oz) RO-TEL Fire Roasted Diced Tomatoes and Green Chilies
- 1 Can (10 oz) can of cream of mushroom soup
- 4 tbsp BBQ rub
- Tortilla Chips

- Large Dutch Oven
Instructions
- Preheat smoker/grill to 350° F.
- Brown the sausage and remove from heat, draining the grease if necessary.
- Add all the ingredients in a large dutch oven, try to mix them together if you can but its not critical and will be easier as the mixture cooks.
- Place the Dutch Oven (with the lid off) over direct heat for 45 minutes.
