Peanut Butter Balls

Story

Chocolate Covered Cherries (next page) might have been the crowd favorite of my mother's Chritmas Party recipes but this one was always my personal favorite.

Ingredients

  • 2 sticks Unsalted Butter, melted
  • 1 tsp Vanilla Extract
  • 1/3 lb Graham Crackers, crushed
  • 1 cup Chopped Pecans (optional)
  • 1 cup Shredded Coconut (optional)
  • 6 oz Peanut Butter
  • 1 lb Powdered Sugar
  • ½ lb Parafin Wax
  • 12 oz Semi-Sweet Chocolate Chips

Tools

  • Double Boiler
  • Wax Paper

Instructions

  1. Mix the melted Butter and vanilla in a large bowl.
  2. Add the Graham Crackers, Peanut Butter, Powdered Sugar, Pecans (if using), and Coconut (if using) to the butter and mix thoroughly.
  3. Form the resulting mixture into small balls (about the size of a small walnut).
  4. Melt chocolate and parafin in a double boiler. You may need to make more than one recipe worth. Start with one recipe's worth, but buy enough for two.
  5. Dip the balls in the chocolate, make sure they are fully covered, and then place on a sheet of wax paper to set.
