Peanut Butter Balls

Story
Chocolate Covered Cherries (next page) might have been the crowd favorite of my mother's Chritmas Party recipes but this one was always my personal favorite.
Ingredients
- 2 sticks Unsalted Butter, melted
- 1 tsp Vanilla Extract
- 1/3 lb Graham Crackers, crushed
- 1 cup Chopped Pecans (optional)
- 1 cup Shredded Coconut (optional)
- 6 oz Peanut Butter
- 1 lb Powdered Sugar
- ½ lb Parafin Wax
- 12 oz Semi-Sweet Chocolate Chips

- Double Boiler
- Wax Paper
Instructions
- Mix the melted Butter and vanilla in a large bowl.
- Add the Graham Crackers, Peanut Butter, Powdered Sugar, Pecans (if using), and Coconut (if using) to the butter and mix thoroughly.
- Form the resulting mixture into small balls (about the size of a small walnut).
- Melt chocolate and parafin in a double boiler. You may need to make more than one recipe worth. Start with one recipe's worth, but buy enough for two.
- Dip the balls in the chocolate, make sure they are fully covered, and then place on a sheet of wax paper to set.
