Honey Roasted Carrots

Story

This is a very flexible recipe, you can make as much (or as little) as you want based on the number of people; just increase or decrease the number of carrots and adjust the olive oil, honey, and salt & pepper to match.

Ingredients

  • Young Carrots
  • ~2 tbsp Olive Oil
  • ~2 tbsp Honey
  • Salt and Pepper

Instructions

  1. Preheat Oven to 375° F and line baking pan with Aluminum Foil (lightly coat with cooking spray).
  2. Place Carrots on a pan in a single layer.
  3. Drizzle Olive Oil on Carrots.
  4. Dirzzle Honey on Carrots.
  5. Add Salt and Pepper.
  6. Roast in oven for 25 to 40 minutes; timing will vary based on size and amount. Check at 25 minutes and then again perioidically until they are ready.
