Honey Roasted Carrots

Story
This is a very flexible recipe, you can make as much (or as little) as you want based on the number of people; just increase or decrease the number of carrots and adjust the olive oil, honey, and salt & pepper to match.
Ingredients
- Young Carrots
- ~2 tbsp Olive Oil
- ~2 tbsp Honey
- Salt and Pepper
Instructions
- Preheat Oven to 375° F and line baking pan with Aluminum Foil (lightly coat with cooking spray).
- Place Carrots on a pan in a single layer.
- Drizzle Olive Oil on Carrots.
- Dirzzle Honey on Carrots.
- Add Salt and Pepper.
- Roast in oven for 25 to 40 minutes; timing will vary based on size and amount. Check at 25 minutes and then again perioidically until they are ready.
