Fresh Apple Cake

Story

This is a cake that freezes very well. Some in the family even prefer it that way as the cold does something to the texture.

Ingredients

  • 1 ½ Cups Vegetable Oil
  • 5 Eggs
  • 1 Cup Walnuts
  • 4 Cups Diced Apples
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 Cups Sugar
  • 1 Cup Raisins
  • 3 Cups All-Purpose Flour
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 2 tsp Vanilla
  • 1/2 Cup Buttermilk
  • 1 Cup Sugar
  • 1 tsp Baking Soda
  • 1 stick Margarine
  • 1/2 tsp Vanilla

Instructions

  1. Preheat over 325° F and oil/flower a bundt/tube pan.
  2. Combine the flour, salt, baking soda, baking powder, and cinnamon in a large bowl and set aside.
  3. Blend the oil and sugar
  4. Add the eggs one at a time, allowing them to just combine before adding the next.
  5. Add the flour mixture slowly allowing the contents to fully incorporate with the oil/sugar/egg mixture.
  6. Add the vanilla.
  7. Fold in the apples, raisins, and walnuts.
  8. Pour batter into pan and bake for 1 ½ hours.
  9. While the cake is baking, combine the sauce ingredients in a sauce pan.
  10. Over medium-high heat, bring sauce to a boil and then remove from heat.
  11. Dip off any foam created in the boiling process.
  12. Pour the sauce over the cake while the cake is still hot and in the pan.
  13. Allow the cake to fully cool before removing from the pan.
