Fresh Apple Cake

Story
This is a cake that freezes very well. Some in the family even prefer it that way as the cold does something to the texture.
Ingredients
- 1 ½ Cups Vegetable Oil
- 5 Eggs
- 1 Cup Walnuts
- 4 Cups Diced Apples
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2 Cups Sugar
- 1 Cup Raisins
- 3 Cups All-Purpose Flour
- 1 tsp Salt
- 2 tsp Cinnamon
- 2 tsp Vanilla
- 1/2 Cup Buttermilk
- 1 Cup Sugar
- 1 tsp Baking Soda
- 1 stick Margarine
- 1/2 tsp Vanilla
Instructions
- Preheat over 325° F and oil/flower a bundt/tube pan.
- Combine the flour, salt, baking soda, baking powder, and cinnamon in a large bowl and set aside.
- Blend the oil and sugar
- Add the eggs one at a time, allowing them to just combine before adding the next.
- Add the flour mixture slowly allowing the contents to fully incorporate with the oil/sugar/egg mixture.
- Add the vanilla.
- Fold in the apples, raisins, and walnuts.
- Pour batter into pan and bake for 1 ½ hours.
- While the cake is baking, combine the sauce ingredients in a sauce pan.
- Over medium-high heat, bring sauce to a boil and then remove from heat.
- Dip off any foam created in the boiling process.
- Pour the sauce over the cake while the cake is still hot and in the pan.
- Allow the cake to fully cool before removing from the pan.
