Chocolate Covered Cherries

Story

Of all the sweets that my mother made for the Christmas party this was probably the most labor intense, but also the universal favorite.

Ingredients

  • 2 lbs Confectioners Sugar
  • 14 oz Sweetened Condensed Milk
  • 1 stick Unsalted Butter (melted)
  • 1 tsp Vanilla Extract
  • Maraschino Cherries (about 120)
  • ½ lb Parafin Wax
  • 12 oz Semi-Sweet Chocolate Chips

Tools

  • Double Boiler
  • Wax Paper

Instructions

  1. Mix the Sugar, Sweetened Condensed Milk, melted Butter, and vanilla in a large bowl.
  2. Knead the resulting, bread like dough and refrigerate until stiff.
  3. From small balls and then refrigerate again.
  4. Flatten cold balls in hand and wrap around a cherry. Refrigerate or Freeze after.
  5. Melt chocolate and parafin in a double boiler. You may need to make more than one recipe worth. Start with one recipe's worth, but buy enough for two.
  6. Dip the balls in the chocolate, make sure they are fully covered, and then place on a sheet of wax paper to set.
  7. They can be stored at room temperature for a couple of days but should be refrigerated or frozen to store longer.
