Chocolate Covered Cherries

Story
Of all the sweets that my mother made for the Christmas party this was probably the most labor intense, but also the universal favorite.
Ingredients
- 2 lbs Confectioners Sugar
- 14 oz Sweetened Condensed Milk
- 1 stick Unsalted Butter (melted)
- 1 tsp Vanilla Extract
- Maraschino Cherries (about 120)
- ½ lb Parafin Wax
- 12 oz Semi-Sweet Chocolate Chips

- Double Boiler
- Wax Paper
Instructions
- Mix the Sugar, Sweetened Condensed Milk, melted Butter, and vanilla in a large bowl.
- Knead the resulting, bread like dough and refrigerate until stiff.
- From small balls and then refrigerate again.
- Flatten cold balls in hand and wrap around a cherry. Refrigerate or Freeze after.
- Melt chocolate and parafin in a double boiler. You may need to make more than one recipe worth. Start with one recipe's worth, but buy enough for two.
- Dip the balls in the chocolate, make sure they are fully covered, and then place on a sheet of wax paper to set.
- They can be stored at room temperature for a couple of days but should be refrigerated or frozen to store longer.
