Ingredients

  • ½ cup Oil
  • 2 cups Plain Flour
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 3 Ripe Bananas
  • 1 cup Sugar
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 1 cup Crushed Pecans

Instructions

  1. Preheat the oven to 350° F, lightly grease (e.g., spray with Pam) one medium, disposable loaf pan.
  2. Cream the oil and sugar.
  3. Add the mashed bananas.
  4. Beat the eggs and add to the creamed banana mixture.
  5. Mix in the other ingredients.
  6. Pour batter into loaf pan and bake for 1 hour.
